Roasted Vegetables with Garlic and Cilantro Yogurt Dip


Vegetables are always a healthy meal option. Here I roasted some vegetables with some herbs/spices. This is good as a healthy appetizer and can be prepared in few minutes. It looks appealing when add different colorful vegetables.

I prepared a yogurt dip with garlic and cilantro. The taste was a little bit spicy and flavorful due to addition of garlic and cilantro. It was well matching to serve with roasted vegetables.


Here are the recipes.
Recipe for Garlic and Cilantro Yogurt Dip
Ingredients
3/4 cup plain yogurt
1 garlic clove minced
2 tbspn chopped cilantro (coriander leaves)
1/4 teaspoon salt (as per taste)
1/4 teaspoon pepper (as per taste)
Method
Mix all ingredients above. Keep the Garlic and Cilantro yogurt dip in a refrigerator until serve.


Recipe for Roasted Vegetables
Ingredients (1-2 servings)
1 carrot cut into lengthwise
1 cup broccoli florets
1 cup cauliflower florets
5-6 green beans sliced lengthwise
1 potato sliced
4 tablespoons cooking oil
1 tbspn lemon  juice
Pinch of curry powder
Pinch of turmeric powder
salt and pepper, to taste
Directions:
Preheat oven to 425F.
Line a baking pan with a baking foil.
Place vegetables on baking tray .Sprinkle with 2-4 tablespoons cooking oil over the vegetables and toss vegetables to coat.
Sprinkle salt, pepper and spices. Drizzle lemon juice over the vegetables.
Bake for about 30 minutes. Flip the vegetables over midway through cooking.
Bake until vegetables are tender and browned.
Serve immediately.

Notes:
Keep an eye on vegetables to prevent burning. Some vegetables may bake early. Pull them out in advance if necessary.
Add 1-2 cooking oil in midway cooking, if necessary and if the vegetables look too dry.

  9. Oh this is great! I love veggie tray that get put out for appetizers but sometimes raw veggies just get a bit old. Roasting is a great idea.
